Vineyard and terroir
The Garganega comes from estate-owned hillside vineyards in Castelcerino di Soave, within the historic Soave Classico area, at elevations between 150 and 450 m above sea level.
Grapes
100% Garganega.
Vinification
Only the healthiest, fully mature bunches are chosen for this naturally sweet sparkling wine. The rigorously selected grapes remain in appassimento until late January. As water evaporates, sugars and aromatic precursors become naturally concentrated. Indigenous yeasts from the grape skins drive a slow, steady fermentation until 11% alcohol has developed. Secondary fermentation follows the Martinotti method.

Alcohol: 12% vol. Total acidity: 5.80 g/L as tartaric acid. Residual sugar: 98.00 g/L. pH: 3.45. Net dry extract: 29 g/L.
Tasting profile
Bright golden yellow, with an abundant, persistent white mousse and a long, fine stream of bubbles. The intense aroma evokes dried fruit and the scent of grapes resting in the drying loft. Sweet, balanced and harmonious on the palate, it is persistent without becoming tiring.
Serving and pairing
Serve at 6–8°C in a crystal flute. Designed for celebratory occasions, it is particularly suited to Pandoro di Verona.
