Vineyard and terroir

The grapes come exclusively from estate-owned hillside vineyards around Campiano, a hamlet of Cazzano di Tramigna in the province of Verona, at approximately 400 m above sea level.

75% Corvina, 15% Corvinone, 5% Rondinella and 5% Molinara.

Vinification

Harvest is entirely manual, taking place from late September into early October. Carefully selected bunches are placed in crates and transferred to a fruttaio for approximately three months of natural appassimento, concentrating their sugars. The dried grapes are crushed between January and February. Fermentation then proceeds in temperature-controlled stainless-steel tanks for 30–40 days, with regular daily pump-overs.

Ageing

The wine matures for three years in wooden casks before bottling, followed by at least two months in bottle.

Technical data

Alcohol: 16.50% vol. Total acidity: 5.50 g/L as tartaric acid. Residual sugar: 5.00 g/L. pH: 3.59. Net dry extract: 31.80 g/L.

Tasting profile

Deep ruby red. The bouquet brings together cherries in liqueur, sour cherries, plums, liquorice and leather, layered with pepper, cinnamon and woodland nuances. The palate is elegant, harmonious and velvety while remaining robust, complex, dry, full-bodied, generous and austere.

Serving and pairing

Serve at 17–18°C and uncork at least one hour beforehand. Traditional partners include game, grilled and braised meats, and long-aged cheeses.
