Vineyard and terroir

Ca’ Visco comes from selected estate-owned hillside vineyards in Castelcerino, within the historic Soave Classico zone, at 150–450 m above sea level. The selection of the estate’s best vineyards was developed over twenty years.

Grapes

75% Garganega and 25% Trebbiano di Soave. Certified organic wine.

Vinification

Trebbiano di Soave is harvested entirely by hand in the first part of September, while Garganega is picked throughout October. Several passes are made through each vineyard to select only ripe bunches. The fruit is placed in 20 kg crates so that it reaches the press intact. The varieties are fermented separately below 18°C. The wine undergoes only one racking and one gentle filtration.

Ageing

Both components mature in small stainless-steel tanks below 16°C. They are blended after maturation, followed by approximately one month in bottle before release.

Tasting profile

Brilliant, intense yellow. A mineral foundation supports aromas of citron, pink grapefruit, tropical fruit, white peach, elderflower and lime blossom. Further notes of apple, pear, passion fruit, chamomile and mint emerge, followed by a peppery accent after a few minutes in the glass. The palate is dry and initially soft, then gains momentum through lively acidity. The finish is long, mouth-filling, clean, fruity and savoury, balancing mature depth with freshness. The wine can develop further complexity over the years.

Serving and pairing

Serve at 9–10°C. Pair with seafood and raw fish, including raw Dublin Bay prawns, or delicate white meats such as baked rabbit.
