Vineyard and terroir
The grapes come from estate-owned hillside vineyards in Castelcerino di Soave, within the historic Soave Classico area, at elevations ranging from 150 to 450 m above sea level. The altitude contributes to the wine’s agile, notably fresh expression of Garganega.

100% Garganega.
Vinification
Harvest is entirely manual and takes place in October. Grapes are gathered in 20 kg crates so the bunches remain intact until pressing. The sparkling base is produced through classic white-wine vinification. Secondary fermentation takes place in an autoclave with selected Saccharomyces bayanus yeast strains, and the wine remains there for approximately six months.

Alcohol: 12% vol. Total acidity: 5.80 g/L as tartaric acid. Residual sugar: 6.40 g/L. pH: 3.30. Net dry extract: 19.80 g/L.
Tasting profile
Bright, luminous straw yellow. The persistent white mousse is abundant, with a long stream of fine bubbles. The fresh, delicate bouquet recalls acacia and cherry blossom, joined by bread crust and sweet almond. Dry, savoury and structured on the palate, it is balanced and persistent, finishing with a pleasant almond note.
Serving and pairing
Serve at 4–6°C. It works well as an aperitif and can accompany an entire meal for those who enjoy dining with sparkling wine.
