Vineyard and terroir
The grapes come from vineyards on the mid and higher slopes around Salemi. The vines grow at 180 metres above sea level, mainly on clay soils.
Vinification
The grapes are selected and harvested by hand during the middle ten days of September. Fermentation uses selected yeasts, with 12 days of maceration at 26–28 °C to extract colour from the skins. The seeds are removed on the fifth day to keep the tannins soft and well balanced. Malolactic fermentation is spontaneous. The wine is made with a low level of sulfites, 50% of the maximum permitted limit.
Ageing
The wine ages for a year in 500-litre tonneaux and 225-litre barriques, with bâtonnage during this time. After bottling it rests in the winery's cellars for at least another 4 months.
Label / history
"Quarantanni" was created to mark Colomba Bianca's 40th anniversary as a producer. It celebrates the partnership of Nero d'Avola and Cabernet Sauvignon in Sicily.
Awards: gold medal at Mundus Vini 2021; silver medals at the Concours Mondial de Bruxelles in 2019 and 2021.
