Vineyard and terroir
The organically grown Zibibbo comes from the Vita-Segesta area of Sicily, at 400 metres above sea level.
Vinification
The grapes are harvested by hand in the second half of September. After a gentle pressing, the must is clarified for 24 hours at 12 °C, then fermented at a low temperature to enhance the grape's distinctive aromas. The sulphite content is low, at 50% of the maximum limit.
Ageing
After bottling, the wine rests in the winery's cellars for at least 3 months.

Label / history
Vitese is the flagship of Colomba Bianca's organic production, a range of nine wines: reds from Nero d'Avola, Syrah and Cabernet Sauvignon; whites from Lucido, Zibibbo, Grillo, Chardonnay and Sauvignon; and a rosé from Nerello Mascalese. The name comes from the Vitese cellar, set among the greenery of the Vita countryside. The label shows a cedar, a tree typical of the area, representing the wines' place of origin.
