Vineyard and terroir

The fruit comes from the hills around Casteggio, where veins of chalk characterise terrain suited to white grapes and varieties vinified as white wine. Harvest takes place around the transition from August to September, with the component varieties picked separately.

Grapes

40% Pinot Nero, 40% Pinot Bianco, 15% Riesling Renano and 5% Sauvignon.

Vinification

After destemming, the berries are lightly broken and transferred with the released must to a temperature-controlled vat. Cryomaceration at 5–8°C for approximately 24–30 hours promotes aromatic extraction. Gentle pressing follows, with a maximum extraction of about 50% must. Fermentation takes place at a controlled 14–19°C. The coarse lees are removed after fermentation, and the component young wines are blended between late October and early November.

Ageing

Approximately 90% of the blend remains in stainless steel, while the balance matures in American white-oak tonneaux. Both portions stay on fine lees until the following March, when they are reunited. The finished wine is stabilised and bottled.

Alcohol: 13.00% vol. Total acidity: 7.10 g/L. pH: 3.35. Dry extract: 22 g/L.

Tasting profile

Bright straw yellow with slight greenish reflections. The intense, composed bouquet opens with white mulberry and yellow plum, followed by broom flowers and a gentle herbaceous background. The palate is balanced and structured, appropriately soft, with measured savouriness, persistence and continuous flavour-aroma expression.

Serving and pairing

Serve at 11–14°C. Its finesse favours clearly defined flavours, including bresaola and similar cured meats, white meats and oily lake fish. It shows its best qualities after at least six months in bottle and continues to refine for approximately two years.
