Vineyard and terroir
The production area covers the eastern part of the municipality of Sondrio and the municipality of Montagna in Valtellina. Castel Grumello gives the subzone its name.
Grapes
At least 95% Nebbiolo, locally known as Chiavennasca. The remainder comprises Merlot, Pinot Noir and the local Rossola and Brugnola varieties.
Vinification
The grapes are destemmed and pressed. Alcoholic fermentation takes place with the skins, which are kept immersed through punch-downs and pump-overs. Maceration lasts approximately 15–20 days at a controlled temperature of 28–30°C. Clarifying rackings follow fermentation.
Ageing
The wine matures for two years in oak barrels, followed by another six months in bottle.
Technical data
Alcohol: 12.5–13.0% vol. Total acidity: 5.40–5.70 g/L. pH: 3.5–3.7. Dry extract: 25–28 g/L.
Tasting profile
Ruby red, with purple reflections in its youth. The penetrating, varied bouquet recalls green hazelnut, raspberry, vanilla and nutmeg. The palate begins with good softness set against pleasant tannins, then develops a full profile with spice, distinct nutmeg and almond notes.
Serving and pairing
Serve at 17–18°C. At two to three years old, it pairs particularly well with traditional Valtellina dishes, including pizzoccheri and polenta. With greater maturity, it suits all types of meat.
Stored horizontally in a cool, dark cellar at a constant temperature, it can develop for up to five or six years.
