Vineyard and terroir
The grapes come from the winery's own vineyard in the historic Castelcerino area. The vineyard faces southeast and lies 350 metres above sea level. The soils are volcanic and the climate mild, conditions that help Garganega develop rich aromas and an elegant, mineral character. The vines average 40 years of age.
Vinification
The grapes are harvested by hand in October. After careful selection they are dried on special racks for at least 4 months, losing 50% of their original weight. They are then destemmed and gently pressed. Fermentation is long and takes place partly in oak barrels and partly in steel tanks.
Ageing
The wine rests on fine lees for 7–8 months with regular bâtonnage. It then matures for a further 4 months in stainless steel tanks, followed by several months in bottle.
