Vineyard and terroir
The grapes come from the producer's own vineyard in the municipality of San Martino Buon Albergo, in the eastern part of Valpolicella. The area is a series of valleys bordered by hills and the Adige River, at the foot of the Alps. The land was part of the seabed in ancient times, so the soils are particularly rich in calcium and limestone deposits. The climate is temperate. The vines have an average age of 20 years.
Vinification
The grapes are harvested by hand and carefully sorted in the vineyard. At the winery they are left to dry briefly in dry, well-ventilated rooms. After pressing, the must is macerated for 3–4 days, then fermented with the skins in temperature-controlled stainless steel tanks. This extracts the polyphenols and tannins that allow the wine to age well. Malolactic fermentation lasts 20 days.
Ageing
The wine is aged for one year, partly in tonneaux and partly in stainless steel tanks.
Tasting profile
Elegant, deep and well-structured.
