Vineyard and terroir
SanGiorgio comes from selected hill-grown fruit in the “Conca d’Oro” cru at San Giorgio Ingannapoltron, within Sant’Ambrogio di Valpolicella.
Grapes
Corvina Veronese, Corvinone, Rondinella and Molinara.
Vinification
The grapes are picked by hand at the beginning of October. Selected bunches undergo approximately 20 days of appassimento on special racks at ambient temperature with forced ventilation. They are then gently pressed, and the must ferments with the skins for around 10 days.
Ageing
Half of the wine matures in stainless-steel tanks and half in French oak tonneaux for six months.
Technical data
Alcohol is given as 13.5% vol. in the Italian wine presentation and 14% vol. in the English technical sheet. Bottle format: 750 ml.
Tasting profile
Ruby to purple-red with magenta or garnet highlights. The complex yet delicate bouquet combines sour cherry, blackberry, cedarwood, orange peel, mocha and medicinal herbs; roasted and mineral nuances are also described. Fine and balanced on the palate, with soft, finely textured tannins and a vibrant savoury line.
Serving and pairing
Serve at 18–20 °C. Suggested pairings include cured meats and vegetarian dishes; pasta with ragù is another published recommendation.
