Vineyard and terroir
The grapes come from a small cru with excellent solar exposure in Castelrotto, within the municipality of San Pietro in Cariano. Monte Danieli lies on the hills of Castelrotto and contains vines approximately 50 years old.
Grapes
Corvina, Corvinone and Rondinella, complemented by indigenous Molinara and Croatina.
Vinification
The best bunches are selected and harvested by hand from mid-September. They dry for three months on special racks at ambient temperature with forced ventilation. Fermentation and maceration on the skins last 50 days.
Ageing
The wine matures for 36 months in barriques and tonneaux, followed by six months in bottle.
Technical data
Alcohol: 16%. Available in 750 ml and 1,500 ml bottles.
Tasting profile
Garnet red, with an intense bouquet of cooked fruit, dried plums, cherries macerated in alcohol, tobacco and spices, including ginger.
Serving and pairing
Uncork several hours before serving at 18–20°C. Pair with roasts, braised meats and long-aged cheeses.
