Vineyard and terroir

Produced from vineyards in Castiglione di Sicilia and Randazzo on Mount Etna’s northern slope, at elevations between 600 and 1,000 m. The technical data identifies young vines across the estate, while the broader description refers to fruit from both young and old, low-yielding vineyards. The volcanic sites carry vines aged approximately 5–50 years, trained as alberello and modified alberello. Yields are 5–6 t/ha; the narrative additionally expresses low productivity as 35 hl/ha.

Vinification

Harvest takes place during the first and second ten-day periods of October. Alcoholic fermentation is temperature-controlled at 25–28 °C, with maceration continuing through the end of fermentation. Malolactic fermentation occurs spontaneously.

Ageing

The wine spends 14–16 months in large 50 hl French-oak barrels, followed by one month in stainless steel before bottling, approximately one year or more after harvest.

Technical data

Alcohol: approximately 14%. Annual production is given as 135,000 bottles in 750 ml format, while the main-page figure is 120,000 bottles.

Tasting profile

Ruby red in colour. Aromas evoke ripe fruit and sweet spices. The palate is fresh, finely balanced, rich and elegant, with a slender profile, fine grip and natural polish. As it ages, the structure integrates and develops richer complexity.

Serving and pairing

Serve at 18 °C. Suggested pairings include pasta, meat dishes and fresh cheeses, though the wine is presented as broadly versatile at the table.
