Vinification
The grapes are picked early by hand to preserve higher acidity, then dried on racks for three months to concentrate their sugar. The bottles are sealed with composite DIAM corks.

Production is 10,000 bottles.
Tasting profile
Deep golden in colour, with aromas of acacia, walnut husk, vanilla and honey. Sweet and concentrated yet balanced by tannin, with flavours of dried fruit, citrus and caramel.
Serving and pairing
Serve at 10 °C. The underlying tannic character makes it versatile: it can be served alone as an aperitif or alongside antipasti, pâté and foie gras. It also pairs with almonds, dry desserts, blue cheeses and salty washed-rind cheeses such as Époisses, Montasio and Gorgonzola.
