Vineyard and terroir
Produced from Sauvignon grown in Friuli-Venezia Giulia.
Grapes
100% Sauvignon, combining Sauvignon Blanc and Sancerre clones.
Vinification
Whole berries are gently pressed in a pneumatic press without breaking the seeds. Following the first racking, the must is clarified by flotation and transferred to stainless-steel vats for fermentation at approximately 15°C. Bottling takes place under vacuum.
Ageing
The wine remains on its lees, with frequent bâtonnage, until bottling. It then rests in bottle for at least two months before release.
Technical data
Annual production is approximately 70,000 bottles. The wine may be sealed with a DIAM composite cork or a STELVIN screwcap.
Tasting profile
Pale straw yellow with green highlights. The aromatic profile features yellow fruit, pepper, melon, sage and peach. These fruit characters continue onto a balanced, elegant palate with minerality and fresh but unobtrusive acidity. The texture is oily, soft and creamy, leading to a persistent finish of fig syrup and tropical fruit.
Serving and pairing
Serve at 12°C. Pair with chicken, pork or turkey; delicate fish and shellfish; goat cheese, yogurt or crème fraîche; and asparagus or other green vegetables. Suitable dishes include asparagus quiche, cucumber-and-dill yogurt salad, green hummus, white-bean casserole with zucchini and white lasagna. Avoid strongly acidic foods such as lemon and tomato.
