Grapes

A five-variety white blend of Chardonnay, Sauvignon, Friulano, Malvasia and Verduzzo. IGT Venezia Giulia.

Vinification

Part of the wine is fermented in brand-new American-oak barriques, while the remainder ferments in stainless-steel tanks. Malolactic fermentation is completed.

Ageing

The oak portion is aged for three months in brand-new American-oak barriques, while the remaining wine stays in stainless steel. The wine matures on its fine lees and is sealed with a composite DIAM cork.

Technical data

Production amounts to 6,000 bottles.

Tasting profile

Vanilla and hazelnut accent creamy apple-pastry, lemon-meringue and graham-cracker flavours, followed by almond and passion fruit on the finish. The style is rich yet soft and approachable, supported by juicy acidity.

Serving and pairing

Serve at 12 °C. Pair with grilled veal chops and mushrooms, seared foie gras, roast chicken, poulet de Bresse or guinea fowl. Its richness suits grilled, seared or roasted shellfish such as lobster and scallops, as well as halibut, sea bass with fennel purée, monkfish, swordfish, salmon and tuna. The nutty notes complement smoked salmon. Hard cheeses such as Cheddar, Gruyère and Provolone are suitable, alongside wild mushrooms, slow-roasted tomatoes, white truffles, red peppers, corn, butternut squash and pumpkin.
