Vineyard and terroir
The grapes grow in hillside vineyards north of Bari in Puglia, at 350–400 m above sea level, on clay and limestone soils. All vineyard work is carried out by hand under the supervision of the winery’s winemakers, with minimal intervention in the vines’ natural growth. Green pruning is used to concentrate the grapes’ flavours.
Vinification
The grapes are generally harvested in the second half of October and transported to the winery in small crates to preserve their freshness and integrity. They are carefully sorted, with only healthy, undamaged fruit selected. Extended skin-contact maceration is followed by controlled-temperature fermentation with selected yeasts.
Ageing
The wine matures in stainless-steel tanks for 10 months.
