Vineyard and terroir
The grapes are grown near the province of Bari, where the climate is warm and windy. The vines stand in clay and limestone soils and are trained using the Guyot method. Nero di Troia yields little and its vines are vulnerable to disease.
Grapes
Nero di Troia is a late-ripening variety and is harvested at the end of the growing season.
Vinification
The grapes are macerated for 20 days. The must is fermented with cultured yeast.
Ageing
The wine is aged in barrels for 12 months.
