Vineyard and terroir
The vineyards lie on hills at 480 m above sea level, north of Bari in the Castel del Monte area. Although the area is set between the Apennines and the Adriatic Sea, the climate is hot and dry. The region has around 300 sunny days a year, and daytime temperatures regularly rise above 40 °C in midsummer. The grapes therefore reach high sugar levels during the growing season, and so high potential alcohol. The soils are mainly clay and limestone.
Vinification
Some of the grapes are left to dry slightly on the vine, and harvest generally takes place in early November. Fermentation and maceration last 15–20 days at controlled temperature, with selected yeasts. The extended skin contact gives the wine its deep ruby colour.
Ageing
The wine is aged for 8 months in concrete tanks, then for a further 12 months in large French oak barrels.

Deep ruby. Rich, powerful fruit combined with remarkable softness.
Label / history
The name Canace joins the opening syllables of Canosa and Acerenza, the two towns where the wineries are located.
