The grapes are harvested by hand in September. Whole bunches undergo spontaneous fermentation in wooden barrels, followed by 27 days of skin-contact maceration. The wine is neither clarified nor filtered before bottling.
Ageing
The wine rests for 16 months in concrete vessels, followed by 24 months in bottle.
