Vineyard and terroir
The grapes grow in the producer’s vineyards in Basilicata, around 500 m above sea level in the towns of Ripacandida and Maschito. The soils are medium-textured and volcanic, and yields do not exceed 45 hl/ha.
Vinification
The grapes are harvested in the second half of October and traditionally vinified for 10 days in cement fermenters.
Ageing
The wine ages for at least 18 months in French oak barrels.
Serving and pairing
Pair with pork, braised beef, osso buco, leg of lamb, spicy sausages, sheep’s-milk or Italian cheeses, and other Italian dishes.
