Questo vino
Vineyard and terroir
The grapes come from Vigna del Bruciato, where the vines are trained to spur-pruned cordon and produce approximately 1,000 g per plant. Harvest is by hand, beginning in early September and continuing until the middle of October.
Grapes
50% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc and 10% Petit Verdot.
Vinification
The grapes are gently destemmed and handled carefully before spontaneous fermentation with indigenous yeasts. Skin contact lasts approximately 15 days.
Ageing
The wine matures for 12 months in second- and third-use barriques.
Technical data
Alcohol: 14% vol. The standard bottle is 750 ml; the shop also presents a 1.5 L magnum and a six-bottle case containing 375 ml bottles.
Tasting profile
Intense ruby red. The nose is fruit-forward, with cherry and redcurrant joined by discreet spicy undertones. Freshness and harmony define the palate, with sweet, silky tannins and an elegant, pleasing finish of good persistence.
Serving and pairing
Serve at 15–16°C. Pair with red meats and medium- to well-aged cheeses; it can also accompany substantial fish dishes from the local cuisine.
