Vineyard and terroir
The fruit is grown in Manduria, in Puglia.
Vinification
The grapes are harvested during the first ten days of September and carefully sorted. They macerate for 14 days, then undergo alcoholic fermentation below 20 °C. The wine is transferred to French oak barrels for malolactic fermentation.
Ageing
The wine matures in wooden vessels for 20 months, followed by six months in bottle before release.
