Vineyard and terroir

The Chardonnay is drawn from southeast-facing vineyards on limestone soils in southern Alto Adige. The sites combine classic medium elevations with cooler vineyards reaching 600 m above sea level. Mediterranean warmth and cool winds from the Dolomites contribute contrasting climatic influences. The grapes are harvested entirely by hand.

Grapes

100% Chardonnay.

Vinification

After harvest, the grapes are carefully pressed. The fresh must is clarified statically at low temperature and then fermented gently in steel tanks at a controlled 20°C.

Ageing

The young wine matures for several months in steel tanks on its fine lees.

Technical data

The 2025 wine has 13.00% alcohol, total acidity of 5.8 g/L and residual sugar of 0.8 g/L. It is bottled in 0.75 L and has an estimated ageing capacity of 3–5 years.

Tasting profile

Brilliant straw yellow. The fruity bouquet brings together exotic fruit, ripe apple and light floral aromas. The palate is elegant and mild, leading to an engaging finish.

Serving and pairing

Serve at 12–14°C. Suitable as an aperitif and with Mediterranean cuisine, pasta and fish dishes, especially freshwater fish such as trout, pike and salmon.

Vintage notes

The 2025 harvest started on 27 August and concluded just over a month later. After relatively early flowering, a warm and dry June gave way to a markedly cooler July, helping preserve natural freshness and acidity. August offered favourable ripening conditions. Sunshine alternated with occasional rainfall in September toward the end of harvest, and the grapes reached the cellar healthy and balanced.
