Vineyard and terroir
The fruit is selected from parcels in the historic Kalterersee Classico Superiore growing area, in the heart of Alto Adige. The sunlit sites have calcareous soils and are cooled by fresh evening mountain temperatures and the afternoon Ora wind. The regional interplay of Mediterranean warmth and cool Dolomite air brings freshness and tension. Harvesting is entirely by hand, and only fully ripe grapes are selected.

Vinification
Traditional must fermentation lasts seven days in stainless-steel tanks at 27°C.
Ageing
The wine matures partly in 80 hL Slavonian/French oak barrels and partly in stainless-steel tanks. Its style is intended to be approachable while young, although the 2025 technical sheet gives an ageing potential of 3–7 years.
Technical data
The 2025 wine has 12.50% alcohol, 5.1 g/L total acidity and 1.7 g/L residual sugar. It is available in 0.75 L bottles.
Tasting profile
Fresh ruby red. The elegant, fruit-led bouquet brings together sour cherry, violet, white pepper and dark chocolate. Delicate tannins and a fresh structure shape a light, buoyant palate, leading to a juicy, spicy finish. A published Vogue note for the 2022 vintage emphasizes berries, followed by a lively impression of spice and almond.
Serving and pairing
Serve at 13–15°C. Pair with classic South Tyrolean or Mediterranean cooking, appetizers, lightly dressed pasta and white meat; its adaptable style suits a broad range of dishes.
Vintage notes
The 2025 harvest began on 27 August and continued for just over one month. Relatively early flowering was followed by a warm, dry June and a markedly cooler July, helping to retain the grapes’ natural freshness and acidity. August supported ideal ripening. September brought alternating sunshine and occasional late-harvest rain, and the fruit reached the cellar healthy and balanced.
Label / history
Schiava has long occupied a central place in South Tyrolean winegrowing and remains integral to the estate’s history and identity. “Per sé,” meaning “for itself,” presents a contemporary interpretation of Lago di Caldaro Classico Superiore while retaining its traditional foundation.
