Questo vino
Vineyard and terroir
The grapes come from south-east-facing vineyards between approximately 200 and 400 m. Their calcareous soils contain clay or loam and sand. Mediterranean warmth is balanced by cool winds from the surrounding Dolomites. Harvesting is entirely by hand.
Grapes
100% Merlot.
Vinification
Traditional temperature-controlled fermentation takes place for 10 days in stainless-steel tanks. Malolactic fermentation follows in 80 hl barrels made from French and Slavonian oak.
Ageing
The wine matures in large oak barrels.
Technical data
The 2025 has 13.0% alcohol, 4.5 g/L total acidity and 1.4 g/L residual sugar. It is available in 0.75 L bottles and has an expected ageing window of 5–7 years.
Tasting profile
Fresh garnet red. The intense, clean bouquet combines wild berries, spice and a touch of chocolate. Firm tannins and a fleshy structure give the palate weight, while softness, juiciness and elegance maintain balance through a pleasantly stimulating finish.
Serving and pairing
Serve at 16–18°C. Pair with steaks, roasts, grilled or fried red meat, a broad range of other meat dishes, or mature cheeses.
Vintage notes
The 2025 harvest started on 27 August and ended just over a month later. After relatively early flowering, warm and dry conditions in June gave way to a much cooler July, helping preserve the grapes’ freshness and acidity. August favoured ripening, while September alternated sunny periods with some late-harvest rainfall. The fruit reached the cellar healthy and with balanced maturity.
