Vineyard and terroir
The grapes grow on calcareous soils with a sandy component in southeast- and southwest-facing vineyards. Mediterranean warmth combines with cool winds from the Dolomites, contributing tension and freshness. The fruit is picked entirely by hand.
Grapes
100% Sauvignon.
Vinification
The grapes are carefully pressed after harvest. The fresh must undergoes static clarification at low temperature, followed by gentle fermentation in stainless-steel tanks at a controlled 19°C.
Ageing
Several months on the fine lees in stainless-steel tanks.
Technical data
Vintage 2025. Alcohol: 13.50% vol. Total acidity: 6.4 g/L. Residual sugar: 0.3 g/L. Available in 0.75 L bottles. Ageing potential is 3–5 years.
Tasting profile
Deep yellow with green highlights. The aromatic bouquet combines ripe gooseberry, papaya and elderberry with delicate herbal accents. Juicy acidity and an elegant structure lead to an inviting finish.
Serving and pairing
Serve at 12–14°C. Suitable as a fresh aperitif and with starters, pasta, fish dishes—particularly freshwater fish—and poultry.
Vintage notes
The 2025 harvest began on 27 August and ended just over a month later. Relatively early flowering was followed by a warm, dry June. Cooler weather in July helped preserve natural freshness and acidity, and August provided favourable ripening conditions. Sunshine alternated with occasional rain in September toward the close of harvest; the grapes reached the cellar healthy and balanced.
