Vineyard and terroir
The wine comes from the Novello area. Elvio Cogno works with fruit from Ravera, one of the important crus in the commune of Novello.
Vinification
The ripe clusters are picked entirely by hand. Vinification is fairly traditional, with fermentation in stainless steel tanks so that the natural fruit aromas come through.
Ageing
The wine is aged for one year in large, lightly toasted Slavonian oak casks, which give it greater depth and a rounded texture. It then rests in bottle for a further six months.
Tasting profile
Soft and rich in profile, with complex aromas. Each sip is clear and well defined, with a balance of brightness and delicacy. The bottle rest brings it to full harmony.
