Vineyard and terroir
The grapes come only from the finest sites in two communes: Faedo, with chalky soils, and Valle di Cembra, where the soils are rich in porphyry. The local microclimate, with marked differences between daytime and nighttime temperatures, favours especially aromatic Müller-Thurgau. Bunches are thinned in summer.
Vinification
Harvest is by hand at full phenolic ripeness. In the winery the grapes undergo cold maceration, then ferment with selected yeasts in temperature-controlled stainless steel tanks.
Ageing
The wine rests on fine lees for several months, with regular bâtonnage.
