Vineyard and terroir
The Sauvignon Blanc is grown in South Tyrol at 600–700 m above sea level, with a planting density of 9,000–12,500 vines/ha.
Vinification
The grapes are harvested by hand at the end of September. The must ferments at a controlled temperature in large acacia barrels.
Ageing
The wine remains on its fine lees in the acacia barrels for 10 months, followed by a further 12 months in bottle in the winery’s cellars before release.

Vintage notes
In 2019, a relatively mild winter was followed by an early spring and cool, wet conditions in April and May. After flowering, the weather turned hot and dry. Limited rainfall and below-average temperatures slowed ripening toward the end of summer. The harvest ran from early September until the end of October.
