Vineyard and terroir
The Sauvignon Blanc comes from a quality-selected vineyard at Farnetella, planted at 550 m. Planting density is approximately 5,400 vines per hectare. The vines are trained to simple Guyot with 8–14 buds.
Grapes
100% Sauvignon Blanc from French-origin clones.
Vinification
The clusters are harvested exclusively by hand into 20 kg boxes and undergo soft pressing, yielding approximately 60% juice. The must is cold-settled for 24 hours, then transferred to 225 L French oak barrels for fermentation.
Ageing
The wine matures on its lees in barrel with programmed daily bâtonnage. It is racked and blended in May–June, then receives at least three months of bottle ageing before release.
Technical data
IGT Toscana. Production is 3,000 bottles.
Tasting profile
Straw yellow in colour. The fruit-forward bouquet shows elderflower and red-pepper notes. The palate is full-fruited, with balanced acidity, lively flavour and fine structure.
