Vineyard and terroir
The grapes are grown in the producer's own vineyards in Veneto. The wine is organic, and phacelia, a green manure plant and natural fertilizer, is grown between the vines in keeping with the principles of biodynamic viticulture.
Vinification
The grapes are harvested by hand at optimal ripeness, usually from late September to early October, and only the best bunches are selected. After the first fermentation, pomace from Amarone wine is added to the must for a second fermentation lasting 15 days.
Ageing
The wine is aged for 16–24 months in oak barrels, then rests for 6 months in bottle in the winery's cellars.

Label / history
Geese roamed freely around the property when Fasoli Gino was still a small farm. The goose became the company's symbol and appears on its labels. It wears a jacket and tie, representing the journey of the estate's organic production from a simple rural product to something refined and elegant. The flower in its buttonhole is phacelia.
