Vineyard and terroir
The grapes come from the winery's own vineyards in Veneto. The wine is organic. Phacelia, a green manure plant and natural fertiliser, is grown between the vines in keeping with the principles of biodynamic viticulture.
Vinification
Harvest begins in late September and is carried out in several stages. Part of the crop is set in crates to dry gently for 15–20 days. Fresh and dried grapes are fermented separately: the fresh grapes in stainless steel tanks, the dried grapes in wooden barrels.
Ageing
The wine ages for 10–12 months, followed by a further 5–6 months in bottle.

Label / history
Fasoli Gino was once a small farm where geese roamed freely around the property. The goose became the company's symbol and appears on the labels. It wears a jacket and tie, representing the journey of the estate's organic production from a simple farm product to something refined and elegant. The flower in its buttonhole is phacelia.
The wine has won a bronze medal at Decanter, a silver medal at the Berliner Wein Trophy and a silver medal at the Concours Mondial Bruxelles.
