Vineyard and terroir
The fruit comes from 3 ha of 30-year-old Durella vines on the slopes of Monte Calvarina at Brenton, in the municipality of Roncà. The vineyard lies at 300 m and is trained to pergola veronese at a density of 2,500 vines per hectare. Its clay soil is volcanic in origin.

Vinification
The grapes are harvested by hand into 10 kg crates at the end of September. Whole bunches are pressed without destemming, and the must ferments in stainless-steel tanks.
Ageing
The base wine remains on its lees in stainless steel until the beginning of the following summer. Tirage occurs eight months after harvest, followed by 36 months on the lees in bottle. Remuage is performed manually on pupitres. After disgorgement, the wine rests for another six months before release.

Tasting profile
Bright yellow in appearance. The aroma reflects the variety through white flowers and aromatic herbs. A fine perlage gives the palate a creamy texture, while savoury and gently herbaceous notes bring definition and elegance. Thirty-six months on the lees temper Durella’s exuberant acidity without obscuring its character.
Serving and pairing
Pair with raw fish, baccalà—particularly baccalà mantecato—or prosciutto crudo.
