Vineyard and terroir
The 16.5 ha vineyard lies at Bastia in Montecchia di Crosara, on the ridge separating Val d’Alpone from Val d’Illasi, at 450 m above sea level. Its two broad plateaus have clay-rich soils derived from limestone. The organically cultivated vines average 15 years of age and are planted at 5,000 vines/ha.
Grapes
Corvina and Rondinella.
Vinification
The grapes are harvested by hand into 6 kg crates during the second or third week of September. They remain in the drying room until late November or early December, after which they are crushed and fermented in steel vats. Malolactic fermentation follows immediately.
Ageing
Maturation lasts 24 months in 500-litre oak barrels, followed by one year in bottle before release.
Tasting profile
Deep ruby with carmine reflections. Cherry-led fruit is joined by balsamic nuances of liquorice, myrtle and juniper. The palate is elegant and velvety, with a very long finish. Black cherry and cocoa powder lead into sweet, penetrating notes of cinnamon, juniper and liquorice.
Serving and pairing
Pair with wild game, mature cheeses or dark chocolate.
Recognition
The winery records Bibenda’s 5 Grappoli for the 2014, 2017, 2018 and 2019 vintages. The 2017 vintage also received Guida Bio’s Foglia d’Oro, while the 2018 vintage earned a Gilbert & Gaillard Double Gold Medal.
