Vineyard and terroir
The nine hectares of Guyot-trained vines occupy the volcanic hills of Monte Calvarina in the municipality of Roncà, between 250 and 400 m above sea level. The vines are 20 years old and planted at 4,500 vines per hectare.
Grapes
100% Garganega.
Vinification
Harvest is manual, using 10 kg crates. Ninety percent of the crop is picked at the end of September and the remaining ten percent at the end of October. Fermentation and maturation take place in stainless-steel vats.
Tasting profile
Straw yellow. The complex bouquet brings together white flowers, gooseberry, lemon, grapefruit, thyme and rosemary. The palate is elegant, refined and savoury, supported by lively acidity.
Serving and pairing
When young, pair with shellfish, raw seafood, fried fish and cured meats. After five or six years in bottle, it can accompany more complex dishes such as Baccalà alla Vicentina.
Ageing
The wine can develop in bottle for at least ten years. With maturity it gains deeper colour with intense green nuances, complex mineral aromas and a velvety, elegant texture while retaining its drinkability. The screw-cap version is preferred for ageing.
