Vineyard and terroir
The fruit comes from 3 ha of 30-year-old Durella vines on the slopes of Monte Calvarina at Brenton, in the municipality of Roncà. The vineyard lies at 300 m and is trained to pergola veronese at a density of 2,500 vines per hectare. Its clay soil is volcanic in origin.

Vinification
The grapes are harvested by hand into 10 kg crates at the end of September. Whole bunches are pressed without destemming, and the must ferments in stainless-steel tanks.
Ageing
The base wine remains on its lees in stainless steel until the beginning of the following summer. Tirage occurs eight months after harvest, followed by 60 months on the lees in bottle. Remuage is performed manually on pupitres. After disgorgement, the wine rests for another 12 months before release.

Tasting profile
Straw yellow with intense reflections. The nose combines yellow stone fruit and hay with fresh yeast, nettle and sage. The perlage is fine, elegant and persistent. Despite the extended 60-month maturation, the palate retains freshness and fragrant fruit, with pronounced notes of peach and apple supported by sage and rosemary.
Serving and pairing
A characterful sparkling wine for grilled fish and shellfish, rabbit or kid goat. It also pairs particularly well with baccalà mantecato and grilled polenta.

The 2016 release received Vitae AIS’s 4 Viti in the 2025 guide, followed by the 2017 release in the 2026 guide.
