Vineyard and terroir
The Sauvignon comes from a 2-hectare, Guyot-trained vineyard in Clauiano, within the municipality of Trivignano Udinese in the province of Udine. The complex alluvial soil was formed by the Tor River and contains small pebbles, silt and clay. Planting density is 4,500 vines per hectare, and the vines are 10 years old.
Grapes
Sauvignon.
Vinification
The grapes are harvested by hand into 10 kg crates during the first week of September. Fermentation takes place in steel vats.
Ageing
The wine remains on its own yeasts until the spring following harvest.
Tasting profile
Straw-coloured with green highlights. The nose is distinctly varietal, combining acacia blossom and boxwood with lychee, passion fruit, sage and tomato leaf. The palate opens with Sauvignon's complex vegetal character and develops into a long, persistent and savoury finish.
Serving and pairing
Suitable for vegetable-led dishes, pinzimonio and zucchini flowers. It can also accompany prosciutto with melon and pairs particularly well with asparagus, eggs or risotto.
