Grapes
Pure Grillo. The variety’s capacity to develop with age inspired Antonio Moretti Cuseri to mature a small experimental lot in wood and ovoid concrete vessels. Initially intended for family and friends, the wine was subsequently released commercially after the trial was well received.
Vinification
Fermentation and maceration take place at controlled temperature for approximately 20 days. The wine is divided between ovoid concrete vessels and small barrels.
Ageing
Maturation continues for at least six months, partly in ovoid concrete vessels and partly in small barrels, followed by no less than six months in bottle.
Tasting profile
Crystal-clear yellow. Citrus, orange blossom and acacia honey are joined by balsamic herbs, delicate ginger and vanilla nuances, and marine accents. The palate is soft, full and dense, with savoury minerality and freshness leading to a flavoursome, persistent finish.
Serving and pairing
Pair with seafood gratins, crisp octopus, grilled fish, delicate risottos or roast white meats.
Label / history
The name recalls the wine’s beginnings as a small experimental production shared only with family and friends.
