Vineyard and terroir
The old vineyards lie in the unspoilt territory of Los Pandos, Almansa. Pronounced shifts between daytime and nighttime temperatures continue even during the hottest months, supporting aromatic development and balanced acidity.
Grapes
100% Monastrell.
Vinification
The grapes are crushed and fermented in horizontal rotary tanks. Maceration lasts 8 days at 26°C. Malolactic fermentation follows. After barrel maturation, the wine receives a light clarification and cold stabilization, followed by amicrobic filtration before bottling.
Ageing
At least 6 months in 300 L French oak barrels, with new oak accounting for 15% of the barrels.
Tasting profile
Clear and bright, with an exceptionally intense cherry-red colour. The bouquet preserves Monastrell’s fruit character, combining subtle notes of preserved fruit with smoke and toast from gently toasted French oak. The palate is fresh and balanced, lively and full-bodied, with pronounced acidity and polished, noble tannins.
Serving and pairing
Serve at 16–18°C with full-flavoured stews, rich meats, mushroom pasta, cured meats such as Spanish ham, or mature cheeses.
