Vineyard and terroir
The vineyards occupy steep slopes in inland Albacete in southeastern Spain, at 700–800 m above sea level. The climate is mild and dry, with a marked difference between daytime and nighttime temperatures. The low-fertility soils are reddish-brown sandy clay rich in limestone and chalk.
Grapes
Verdejo and Sauvignon Blanc; proportions are not specified.
Vinification
The grapes are harvested mechanically at night so they reach the winery as cold as possible, limiting exposure to heat and protecting the must from oxidation. After gentle pressing, the must ferments in stainless-steel tanks for 25 days at 15°C to develop aroma and structure. Light clarification and stabilization precede amicrobic filtration and bottling.
Tasting profile
Clean and bright, with a pale-yellow colour and green highlights. The medium-intensity bouquet shows tropical fruit, particularly pineapple and mango, together with green apple. The finish carries an aniseed note.
Serving and pairing
Serve at 10–12°C. Suitable as an aperitif and with fish, shellfish or appetizers.
