Vineyard and terroir
The fruit comes from north-facing vineyards at the Borgo Guarini estate in Trapani, 300 metres above sea level. The mixed soils are predominantly clay. Planting density is 4,500–5,000 vines per hectare, with yields limited to 7,500 kg per hectare.
Vinification
The grapes are harvested by hand in late August. Fermentation takes place in stainless-steel tanks at a controlled temperature of 24 °C.
Ageing
The wine matures for six months in American oak barrels, followed by three months in bottle.
Label / history
Firriato was founded in 1985 by Salvatore Di Gaetano in Erice, near Trapani. The estate subsequently expanded through the creation of new wines, the acquisition of additional farms, and improvements to its winemaking techniques and equipment.
