Vineyard and terroir
The grapes grow on sunny, Mediterranean-wind-ventilated slopes in Trapani, Sicily, at 250–400 metres. The soils are mixed, with a high proportion of clay.
Vinification
The grapes are harvested by hand from mid to late September and gently pressed, with a maximum juice yield of 60%. Alcoholic fermentation lasts 20 days at 16–18 °C.
Ageing
The wine matures on its lees for one month, followed by one month in bottle before release.
Label / history
Firriato was founded in 1985 by Salvatore Di Gaetano in Erice, near Trapani.
