Vineyard and terroir
The fruit comes from the only vineyard on Favignana, the largest island on which the Calamoni estate has land. The south-facing site lies at sea level, 10 metres from the coast. Its natural limestone soil contains marine fossils and deposits accumulated over thousands of years. The proximity of the Mediterranean Sea and these marine sediments contribute unusual maritime accents to the fruit flavours.
Vinification
The grapes are harvested by hand in early September. Traditional fermentation takes place in stainless-steel tanks for 12 days at a controlled temperature of 24–26 °C.
Ageing
The wine matures for four months in oak barrels and stainless-steel tanks, followed by at least six months in bottle.
