Vineyard and terroir
The grapes grow on sunny, well-ventilated slopes in Trapani, Sicily, exposed to Mediterranean winds. The north-facing vineyards are situated at 300 m above sea level on mixed soils with a high proportion of clay. Planting density is 4,200 vines/ha, and yields do not exceed 8,000 kg/ha.
Vinification
The grapes are harvested by hand during the middle and final thirds of September. They are gently pressed, with juice yield limited to 60%. Alcoholic fermentation lasts 20 days at 16–18 °C.
Ageing
The wine rests on its lees for one month.
