Vineyard and terroir
The fruit comes from two organically farmed vineyards in the municipality of Cinigiano. La Fornace, near Castello di Porrona, lies at 360 metres above sea level and faces east. Its soils consist of sandy sandstone with clay. Vigna di Sara is situated on the Castiglioncello Bandini side of Cinigiano at 320 metres, faces south and has tuffaceous sandstone soils. The latter vineyard supplies the Malvasia Toscana and was planted in 1973.
Across the two sites, the vines are 25–49 years old, planted at 4,000 vines per hectare and trained to spur-pruned cordon.
Grapes
Vermentino and Malvasia Bianca Toscana.
Vinification
Harvest takes place during the first and second weeks of September. Fermentation is driven by indigenous yeasts, with 30 days of skin maceration.
Ageing
The wine is matured across tonneaux, acacia barriques, terracotta and stainless-steel vessels.
