Vineyard and terroir

Pinot Grigio comes from Guyot-trained hillside vineyards in Alto Adige and Trentino. The technical sheet gives an elevation range of 300–800 metres, while the wine page gives 350–800 metres. Exposures range from south to southwest. The deep, rich soils contain clay and silt and derive from erosion of the mountain above.

Vinification

The must ferments at controlled temperature, almost entirely in stainless-steel tanks, with a small quantity fermented in barriques. The components remain separate during fermentation and maturation.

Ageing

The wine matures on its lees for approximately four months. It reaches its best expression after a further three to four months in bottle.

Technical data

Yield: 60 hl/ha. Production: 40,000–45,000 bottles. Recommended serving temperature: 12–14 °C.

Tasting profile

Intense straw yellow. The floral bouquet recalls acacia blossom, sage and hay, alongside almond and sandalwood. With sufficient bottle maturation, notes of lime blossom and honey emerge. The palate combines finesse, elegance and freshness.

Serving and pairing

Pair with pasta, rice and grain dishes, vegetable-based preparations, or plainly grilled white meats.
