Vinification
The grapes are harvested by hand and undergo two selections, first in the vineyard and again at the winery. Fermentation takes place with wild yeasts in conical stainless-steel tanks to preserve freshness.
Ageing
The wine rests for one year in previously used barrels, which add structure to its complexity.
