Vineyard and terroir
The vineyards at Castello di Nipozzano, near Florence, cover 250 hectares at elevations of 250–500 metres. They have a south-eastern exposure and dry, well-drained, stony clay-limestone soils. Planting density ranges from 2,500 to 6,000 vines per hectare.
Vinification
The grapes are harvested by hand. Fermentation at the winery is followed by malolactic fermentation, with maceration lasting 20 days.
Ageing
The wine matures for 24 months in large oak barrels, followed by three months in bottle in the estate’s cellars.
