Vineyard and terroir
Negroamaro from flat vineyards in the Manduria countryside, on clay-limestone soil and trained using the Guyot system.

Vinification
Harvest takes place in mid-September. Bunches are picked by hand into plastic crates, carefully selected and transported in an isothermal truck. A second selection is carried out on a sorting table before destemming and gentle crushing. Maceration takes place in a stainless-steel tank, with 2–3 weeks of skin contact, temperature control of the cap and two délestages each day. The skins are pressed with a vertical hydraulic press.
Ageing
The wine matures in wood for approximately nine months. It is bottled without fining agents or induced tartaric precipitation, then rests for about 12 months before release.
Label / history
Jo takes its name from the Ionian Sea, which washes the coast of Manduria. “Jonico” is also presented as a synonym for Negroamaro, a native grape of the wider Salento area.
